- 1 onion
- 3 courgettes
- olive oil
- salt
- black pepper
Instructions
- Peeling the onion, cutting it into thin slices and cooking it in a pan with a little oil.
- Meanwhile, washing the courgettes, cutting them into thin slices and adding them to the fried onion with a pinch of salt.
- Cooking for about 30 minutes then breaking the eggs directly into the pan, with a little black pepper, and mixing gently with a wooden spoon for a few minutes, to blend the eggs well.
- Finally, serving it hot or cold.
